For Iced Tea
Hot Method: Bring 5 cups of fresh cold water to a boil. Pour over loose tea (use twice the normal amount you would for a hot tea). Steep for 3 - 5 minutes. Remove the tea. Pour over ice in glass. If you like, add sugar or sweetener (we like agave nectar best!), top with a lemon slice and/or a sprig of mint. Hint: adding the sweetener to the tea when it is still hot is best for dissolving.
Cool method: If you prefer Sun Tea, using oolong or black teas works best (our favorite is OOLONG). Add 8 teaspoons (or more) of tea to a gallon sized jar. Cap loosely and place in direct sunlight (shade actually works well, too), for 2 to 4 hours (no more). Add sweetener and/or lemon and a sprig of mint if desired. Pour into ice filled glasses.
* Refrigerate within an hour after brewing. It can be stored in the refrigerator for up to 48 hours.
*Note: Herbal tea should always be prepared with boiling water, even when served cold.
