Basic Steeping Tips
- Use filtered or spring water, whenever possible
- Don’t overboil water
- Remove leaves after recommended time (adjust to taste)
- If you want stronger tea, use more leaves instead of steeping for a longer time
Leaves can be resteeped 2-3 times resulting in various flavor differences. Don’t throw out those leaves until they have given it all up!
Black tea has a class of polyphenols that protect your bones and teeth (help the body from pulling calcium) and is good for your heart. Black tea contains antioxidants and about 1/3 the amount of caffeine as found in a cup of coffee.
The Selimbong Darjeeling hails from the Selimbong Estate of northeastern India. This area is spectacular, located at an altitude of 1400 meters, just 25 km from Tiger Hill and Mount Everest looming in background. This biodynamic, organic, and Fair Trade estate is one of India’s finest tea gardens. Since 1866, the estate has been producing some of India’s finest teas. The tea garden has been certified organic since 1995 and in 1998, it adopted Biodynamic practices and was certified Biodynamic by Demeter International. This beautiful estate dedicates 160 hectares to producing tea, and has won the prestigious Tea Board of India award for quality.
